There's a university in Humboldt, CA which has a special 6-year sustainability program I believe. That's the best I know of, but I live on the west coast. Oregon State is pretty famous for their botany too. But in both of these places you will have to concentrate through undergrad among bunch of party kids getting high and pregnant. Please don't take out student loans.
Smartest guy I've ever seen on the internet has a youtube channel called Canadian Permaculture Legacy. You can learn a lot from there.
I would recommend going to University if you can afford it without loans, there's not a lot of places that will strap you down and force-feed you info about soils and ferns.
