I hope to move over there in the coming years. Surprisingly, it's hard to find any footage of camping on South Island (especially chch). but there's campsites and huts all over the South Island.
A year's hut pass is like $50 so well worth it if you're into tramping and hiking.

this is one of the most popular hiking trails in NZ, the Routeburn.
Some trailrunners sprint the whole trail in a day, for normal people though takes a couple days.
Unfortunately cuz of it's popularity you usually need to book the huts a few months in advance.
But there are like 960 something huts dotted around the country with trails going every which way, so there are plenty that go unvisited for months at a time.

Kiwi here, had our first camp of the season last weekend. First night was still -3 degrees but otherwise was warm weather wise. Myself and the Mrs have found a 3 day tramp we are going to tackle hopefully at the end of summer once we get some time off. Otherwise we're camping as much as we can.

It's a dickpain. I was living in ACT up until this year and found it shocking to adjust to the nanny state that is NSW. ACT is like the Old West in terms of not feeling like your freedom is stifled by shitloads of laws and fines, except unlike the Old West it's not chaos and crime, everyone makes it work. It's a goddamn paradise in this modern age, plus literally surrounded on almost all sides by mountains and national parks and you drive 30mins and you have it all to yourself.

Have lived in Aus and NZ, australian magpies seemed a lot more chill to me. Maybe to do with how kiwis often shoot at them, whereas aussies chuck them food. I've got a 3-5 day tramp planned for each month this year. Gonna do some beach camping and maybe a hut or two with the Mrs as well. Also want to Mt Cook or Aspiring for some alpine next year too. I missed out on a couple of things I wanted to do last year due to weather.

But this shitty government is so trigger happy with lockdowns and generally fucking everyone over and making the country unlivable I'm assuming I'll get to do none of that. Already missed out on two climbs this winter. You can't really plan shit right now, you've just got to grab what you can when you can.

Have slept at maybe -15c with tarp and bivvy. What I found really helps if you are getting cold, is boil up some water and put it back in the bottle. Stick that in your groin or armpit. Or take an actual hottie. You might not want to drink the water afterwards, but can keep reusing it for that purpose, and if you're in the snow you can make more each night. Be aware too that gas cookers can struggle at low temp and especially low temp + altitude. If you keep the canister warm and insulate it from the ground, it'll work. But pressurized liquid fueled stove is more reliable in the cold. Your boots will freeze too, put them away at night. In those conditions I would recommend a tent that you share with others, because it's definitely possible to go down with hypothermia. Make sure no one drags snow into the tent or it'll get wet. Might not be the season, but some tips for next winter I guess!

Rooftop maps are top tier, VICMAP (freely available online government made maps) are good especially in the higher resolutions.

Most of the map detail (i.e. the actual map, as opposed to the shit about what to see) for the various map sources often use the VICMAP data.

As for where to get them, most of the outdoor gear shops in Melb (Bogong Equipment, The Wilderness Shop, Paddy Pallin etc) will all stock a selection, and you can usually find a good selection at Anaconda.
