If you are hunting without night vision, especially in twilight times, the difference is literally like night and day. High quality glass with high transmission values lets you see things you otherwise couldn't. Untill recently, this was a significant advantage in most of Europe, where hunting with night vision was mostly prohibited.
If you use binoculars with variable or large magnification, there is also an effect on different parts of the visible spectrum. In simple terms, colors change with crappy glass. Everybody needs to decide for themselves, wheter they deem that important or not.
