I think they're both great knives that offer very different features. It's your job to pick the features that you like more.

If you leave it unaltered, it will not make sparks on a fire steel.
But this is easily solved by removing part of the coating on the spine of the blade.

In general, stainless will keep it's edge longer than carbon. Especially with a convex grind like on the F1.
Carbon will, however take a keener edge and will be easier to sharpen.
Remember, that's just in general, not all steels conform to this rule of thumb.
If I had to chose a knife, I'd take the F1 in cold, wet conditions. Due to the rust resistance and the fully wrapped handle.
The esee 4 in all other conditions. Because of the longer blade and overall toughness.
But like I said, both are great.
