The only advice I can offer is to strap your shit for when you do flip it and yes eventually, you will flip it. This advice only suits fast flowing rivers/creeks but if you fall out you always go down head first in rapids, it seems silly and it feels really weird but going down legs first is how you get your leg jammed under a log and drown. If it's fast flowing rapids you wear a helmet and go down head first that's how you stay alive (this advice is more applicable to white water) but you did say

Make sure you are a strong swimmer if you don't know it already learn survival stroke it's very intuitive and can be the difference between life and death if separated from your canoe. Another tip. If you fall out and need to chase your canoe, be very careful when doing freestyle with your head above water, it will destroy your stamina.
Basically, just learn how to swim, make sure you have the gear suited to the environment you're in and always strap your gear in so you don't have to chase your shit.
