>>2302544You're probably trying to reprofile the knife. (as in, you aren't actually sharpening the edge, but the shoulder above the edge.)
get any shitty knife and try it again, but rub a sharpie on the edge of the knife and maybe an eighth of an inch (or 2-3mm if you're one of those), on each side. Now start sharpening, but check the edge after 10 passes on one side. See if you have removed the sharpie all the way to the edge. Try EXTRA hard to make sure you're holding the same angle and not scooping the edge as you pass the stone. If you're not removing the marker all the way to the edge, there is a secondary bevel. You need to raise the spine of the knife a bit and try again.
If you've removed the marker all the way to the edge, hit the stone again for 10 passes on that side and feel the other edge of the blade for a wire edge. If you run your fingertip straight over the edge from the opposite side, you should feel a tiny lip of metal catch at your skin. If you feel that, perfect. switch sides and do it again, until you get a wire edge again. Then switch to the fine side or the fine stone and do it again. Once you have the second wire edge, do one pass per side for 20 strokes (10 per side). This is an arbitrary number, you're just trying to worry the wire edge off. If you have a strop, use it now. If you don't, you can use the back of a belt as a strop. If you don't give a shit about stropping, that's fine too. you have a sharp knife.
