As for the rest of it, I can't say what your chances are but I managed to find a girl that's into most of that and I'm no chad.
We go hiking or climbing most weeks and on longer trips fairly often, she happily lived out of a 4x4 for 18 months on our honeymoon, she's got the garden full of fruit/veg/quails/chechens, she's a decent shot with a rifle and genuinely enjoys dressing/butchering whatever we kill. She broke her wrist when we climbed the Matterhorn but made it to the top regardless.
