1 acre should be plenty to keep a couple family goats or sheep. Sheep are easier to keep contained, goats are constantly looking for ways out of confinement and succeed a lot. I've seen the neighbors goat get out of their fencing and jump on the hood of his new truck when it got to the front yard.
You want some actual pasture for them and even at the smallest scale you should try your hand at rotational grazing.
You will have to supplement their diet with minerals and in winter, you will want a shelter for them and a shelter to keep your hay bales out of the elements, you will have to buy feed or hay for winter, that's just how it is. Hell you may have to supplement their diet with feed year round if your pasture isn't good enough.
