would dry rub pike fillets with salt and sugar packets from work camp
then i would hot smoke the fillets over punky birch
the kind of birch that you could push over with one hand. but no green or black
crush it easily. one soaked pile. one dry pile
two parallel hardwood logs, with good coals between them, bbq grill over top
i would leave it there all day. adding dry rub. it was like candy.
