You won’t know what’s really extraneous until you do a few hikes. I could probably squeeze 10 days into my pack in summer, but I know what I need and what I don’t. The biggest thing is food, and rain is basically a certainty.
The sign in the OP isn’t really true anymore. There are two (2) companies that service the 100 Mile Wilderness, and both offer resupplies along the way. One does a supply drop (not sure how it’s secured) while the other meets you at a designated spots and hands you your resupply (more secure but more expensive). The later is Shaws Hiker Hostile, and they do resupplies at three locations.

The six Moon Designs Lunar Solo and Gossamer Gear The One (dumb name) are ok options as well but as a tall guy single pole non-freestanding tents don’t work as well for me. Definitely go with something that uses trekking poles rather than tent poles.

Avoid multi fuels like the Whisperlight and gimmicky things like the Jetboil. They’re both great and have neat attributes, but aren’t appropriate for what you’re doing.
