Where to go hiking in Europe?

I am from the flat Netherlands and I long to see the mountains again. Any recommendations in terms of countries and places? I plan on going solo to regain my inner peace.

Also, hostels or hotels etc?

Romania seems to be pretty neat, you have a real chance of coming across bears and wolves there so it's still proper wild.
Then you have the Alps obviously and the Pyrenees, if you want something easier but real nice you have Picos de Europa in Spain, the Catabrian mountain range is challenging yet accessible for newbies.
It depends highly on what you want.

Thank you for the many suggestions. I am new to hiking in general but I am fond of forests and beautiful (snow-topped) mountain ranges. So maybe the Alps are good to start overall. I also plan on going on a budget, so cost also plays a role

There's nothing wrong with that, what's your general fitness level? If you're in decent shape and have some common sense you can go anywhere that people with more experience goes.
I've never been to Switzerland but if you're on a budget then it's probably going to be tight, depending on how small your budget is.
In Picos you'll hardly find any snow, maybe some leftover ice hiding in the shadow but it's pretty much it, the taller peaks in the Pyrenees will still have some snow though.
If you're Dutch then Norway isn't that far away and should also have you covered on that. Pretty expensive too though.

Thank you for the suggestions. My fitness is average and pretty alright I think. I mentioned the Alps as they are the picturesque view I have in mind and they are not too far by train or (cheap) flight ticket. I have not looked into Scandinavia yet, Norway sounds nice but indeed expensive. How are hikes usually done in Europe as you cannot really camp wherever you want. Are there huts or hostels on the trails? Where do people usually sleep?

In Spain for example you can spend the night above certain elevation, even in places where you "can't" you can manage to do so. If you set a late camp and don't make a fire you can get away with spending the night pretty much anywhere without problems. Many mountain locations have huts indeed where you can pay for a bed bunk and a warm meal, if they are remote they are somewhat expensive, like 50€ for the night. In Scandinavia and Scotland you can camp freely as you have freedom to roam.

Never been in the Alps, but as far as I know should be pretty similar to the pyrenees. Went to the Picos de Europa this summer and I got really surprised, these are great. Didnt seem much cause only around 2k meters over the sea (pyrenees are 3000+ m high) but the bottom of the valleys are just 100 above sea level because its just 50km from the coast so the mountains are fucking impresive and massive because of the 1800 meters of unevenness

There are also in th emountain ranges in Spain literally hundreds of unguarded mountain huts, wich are free to sleep in and in my experience are pretty comfy. Just a fireplace and a table, maybe a wooden plank above the ground to sleep if you are lucky, but I dont need anything more

Switzerland here, hiking here is nice, but it is steep as fuck. Apart from Switzerland I went hiking in Norway (+++), Sweden (++), Finland (++), Scottland (++) and _Iceland (+++). Next on my to do list is the Rhodopes mountains in Bulgaria.
My tip for best value hiking wise would be do DNT hut touring in Norway, they got hundreds if great huts in the mountains and multi day trails connecting them. Ultra comfy, great scenery and nature and as long as you stay in the huts even Norway is cheap. You can do the same in Switzerland with SAC huts, but it is steep as fuck and this year will be full (Covid measures over)

Glarus, Switzerland. Go to the Naturefrundehaus, Mettmen then over to Legerhutte and keep heading east until you feel liking heading home.
