bivvys are practical in that they need no pegging down, need minimal space and are lightweight. the condensation is a non issue, if mountaineers can bivvy on a mountain at -30c without dying from heat transfer from the minimal amount of condensation then its not a problem in anything less either.
the amount of condensation there is on the inside of a gtx bivvy after 8 hours is the same amount of moisture that your skin passively keeps anyway and your sleeping bag stops it from touching you so it doesn't affect you
a bivvy tarp setup is very practical in that is covers all your needs with about half the weight and bulk of a tent, you have a place to cook and get dressed out of the rain and when you go to sleep you are dry, winds and rain blocked and bug free
