In order to really do sausage you need the casing and sausage maker. I don't know. I don't think its worth the time but to each their own. Sometimes you will actually be able to find butchers who will just do sausage for you and it saves you the mess and afternoon of work. I would suggest buying some of those cubes of cheese, pepper jack is good with jalapenos for example and really doing some different flavors. Feta & red pepper, etc. Honestly just look at the flavors of regular chicken or pork sausage they have at the store & try to mimic it.
I'm going to suggest a few recipes I saw online. One is a Mississippi Roast
1 packet au jus
1 packet ranch
1 jar of yellow peppers
1 venison roast
2 onions
1 container beef broth
1 stick of butter
