Just don't pick them from lawns or fields that get pesticides sprayed on them. And preferrably not from busy roadsides, either. The stem is worthless AFAIK and has a latex-like milky substance in it, so don't eat that; I've heard it can make your stomach feel like shit. Flower can be made into tea (let me know how you did it if you try this), leaves into salad (the younger the less strong they are), and the root into "coffee".
