your question is more leather vs canvas material shit, than your question is leather vs goretex. goretex is just a breathable waterproof membrane, theres leather boots with it too.
leather is more physically protective and way less breathable, when we're comparing good boots to good boots. leather's way harder to make a boot actually waterproof so you have to be more careful choosing them.
