Powdered milk and butter are probably going to be your friend here as is hard cheeses and cured or dried meat. I'm not a huge fan of tuna packets but it's an option to add a little protein to otherwise carb heavy meals. Peanut butter works in similar fashion, can just add it to anything.
Obviously you are still going to have some carbs but as long as you manage your intake of simple sugars and focus on providing calories via dietary fat and protein you should be okay.
