Top: Opinel No. 6 - Cheap (costs 10$), super light, great to take with you everywhere because it fits into any trouser pocket no problem. I use it for everyday stuff and for foraging mostly. Got it somewhat recently and like it a lot, the No. 6 is small, at first I was thinking it was a bit too small, but for carrying it with you everywhere it's really convenient, and the No. 6 is still right on the edge of where it would get annoying to use if it was any smaller.
Middle: Mora companion - Cheap at around15$, mostly used for fishing (to kill, gut and prepare the fish, as well as to cut line, prepare lures) and butchering (I use it when butchering chicken in my kitchen). Also fine with some medium batoning and anything where you want a bit stronger blade. No super heavy duty stuff due to the lack of a full tang obviously, but I don't do anything like that anyways. The mora is also my beater knife and I love it for that. The rubber handle means you keep a good grip when your knife and hand is covered in guts, blood, or the animal fat from the chicken. It also means cleanup is easy and the knife won't smell later.
Bottom: Leatherman Wave - 110$ or so these days. Probably one of my oldest knives and built like a tank. It's expensive, but worth it. At one point it was left outside for a long time exposed to the elements, which is why it has that weird darker grey tint on some parts, used to have that everywhere until I used some sandpaper on it. Carry it with me whenever /out/ and fishing, having a multitool can be handy.
All of those are in stainless steel, because I don't want to have to take care of my fishing, foraging or beater knives, I can pay attention to a carbon blade when I am in the kitchen, /out/ I just want low maintenance.
All 3 of these are great. Maybe not the most interesting, but the opinel and mora are very cost effective at least.
