The only numerical measurement I've seen of toughness was from Larrin Thomas and 1095 ranked pretty poorly. There are Joe X videos on youtube for ridiculous knife tests, where plenty of 1095 knives break easily.
I've never seen 1095 chip, but the edge will deform badly with a fairly light impact into anything hard (I've done this by accident a few times).

I don't really care about knife toughness that much, personally. I have a S35VN ESEE knife and it's survived pretty well. I just don't understand why they're clinging to 1095.
