Whats the point of those dried up plants? What ecological niche role does they play? If i was to destroy every single one of those arbustive dried plants and plant native trees in their place, what would happen?

Well, if they are actually dead, they still serve a function. They will create a cooler soil condition for a next succession of plants to grow and perhaps have a better shot at longevity. They will provide habitat and food for insects that feed on dead plant material, and they will eventually break down into a more organically rich topsoil layer.
So, not a bad thing at all.
