OP, what are your means of transport? Car? Tinny? Kayak? There's shitloads of options. Just do what I do and take a tinny around to different islands in the Gold Coast broadwater (Wavebreak, Coomera, Brown or Rat) or pay to stay at North Stradbroke, South Stradbroke (you'll need your own way to get there unless you want to pay $160 for the broadwater taxi), Moreton, Bribie, etc.)
If you have a kayak, I HIGHLY recommend going up to camps 1, 2 and 3 in the Noosa river. Amazing bass fishing up there, and local legend has it that there is a small population of wild barra between camps 2 and 3.
Failing that, jump on Google earth and go up any of the remote creeks in your area, it's not hard to find somewhere fairly remote that you can drive to and stay the night on a river bank. I live on the Goldy and even though we have a fairly large population, it's easy to find a nice quiet spot far from houses.
