If you have lots of money, you can swing parts of Coastal BC, where the winters are mild, you have access to the ocean. Otherwise, I recommend Saskatchewan, specifically north of, but within driving distance of Saskatoon. Cheap, beautiful, and still close to amenities. If you can handle the cold there's ice fishing, snow shoeing, cross country skiing, snowmobiling, winter camping; all sorts of out door activities in the winter too.
Zone 2b or 3a for much of the region I'm talking about if gardening is relevant.
