Depends on the animal and the time of year it was harvested. The tanning method can also determine it a little bit, I've seen some home jobs come out with the skin crinkly like thick paper rather than supple like leather.
Coats harvested during winter beat those from summer, and carnivores' tend to better than large herbivores. Exceptions exist but I think that's a safe generalization to make.
