Plenty of fishing and hunting if that's your thing
Surfing is very popular on the east coast
But aside from one off things like that I do agree, everything is overdeveloped and it's hot as balls anywhere inland. Mosquitoes and other parasites (boomers, new yorkers, junkies, puerto ricans) are a problem year round.

You'd have to look North towards Ocala and Gainesville. Alternatively I found Myakka River State Park in Sarasota to be a nice spot with some dispersed camping. That's a nice option that's not too far off from you.
