What are the minimum amount of tools required to survive for 2 weeks in the woods during the winter (northern Scandinavia). I do not wish to starve so I have to be able to gather/catch food,

Axe for chopping wood
Matches for starting fires
Bow and arrows for hunting prey or a winter fishing kit
Rope for shelter and traps
Knife and sharpener for filleting/cutting

Depending on how light you want your load to be it depends. I'm homeless and have a bunch of blankets and sleeping bags. You'd want a lot of gas cans to be able to boil water for hot water bottles. Balaclava and staying wrapped up with alot of clothes is a no brained and bonus points if thermal ones

Just a reminder that it's dark all hours round in the north. You'll need a hand-crank generator for light or a shit load of fuel.
Clothing that protects, insulates and breathes.
Saw for cutting wood and ice (if fishing).
Snow sled and snow shoes.
It's a lot of hassle for a little scenery this time of the year.

then you better bring your food in. there is no tools that will help you acquire food in the wild. only skills that will. you will not develop these skills in 2 weeks or online. hunting takes a long time to be good at, trapping requires local knowledge, and the best lifetime most skilled foragers on the planet can't survive strictly from foraging in that climate.
bring 2 weeks of food and don't count on finding a single morsel of anything edible out there. your most likely meal will be stumbling across a rotting animal carcass leftovers by pure chance if you have no skills and need to ask.

this is your worst bet and a waste of time until you master other ways of gathering food. you shouldn't consume random plants without about a year of local plant identification experience unless your alternative is death.

You can drill a hole in the ice with a special tool and lower a line with hook and bait. Sounds simple enough to me. I wouldn’t recommend you rely solely on it for two weeks but in theory it should be possible
