you cant develop an immunity to parasites. if they're in you, and they're the right type of parasite/in the right stage, they'll stay with you.
what you can do though is take necessary precautions to stop the cycle/ingestion of parasites

What I've heard a lot specifically about giardia is that when you're exposed to it often enough you no longer suffer from negative effects when you get it

well to answer your question in the OP: no it wouldn't be a good idea at all and it would be much simpler to just take the necessary precautions to prevent getting giardia in the first place I.E. treatment of water

the information im reading about giardia/immunities is dodgy at best. some places are saying that it is possible, and some aren't. i wouldn't believe it.

They cause epilepsy, among other things.
And there's plenty of parasites that alter behaviour (e,g. making you disregard hygiene).
Parasites are scary shit.

You can do it, it's pretty simple.

Pick several human subjects, expose them to bacteria, and see who survives the longest. Have the survivors reproduce with each other. Test their children to see whether their odds of survival are superior.

Pick other human subjects, do the same thing, and have them reproduce with the children of your former subjects.

Keep doing this until you finally have a family that is 100% resistant to parasites.
