Only a few % will actually travel miles and miles away from their vehicles. Great Smoky Mountains NP sees 400,000 hikers per year, though, but it has a lot more trails.
You're probably looking at 6-8 hikers per linear mile of trail in both GSMNP and RMNP, which isn't great, but then again these are hugely popular NPs.
In the backcountry of either park, you could probably go for miles/days without seeing a soul, if you're a bit lucky.
If you want solitude, don't go to a NP. In NPs you're generally required to stick to established campsites and not clear "previously undisturbed ground," so even in the backcountry you may find a desired backcountry campsite already occupied.
