during winter when daylight is short and you have to make camp early i tend to stick close to water so i can ice fish and set up baits for the next morning
then there is building quinzhee for fun or skiing/snowshoeing in the dark by the map until evening

Bring plenty of breathable layers. Only use water-resistant fabrics if its raining or snowing on you.
I personally just do day trips when it gets that cold out.
