I live on the Mississippi Gulf Coast and have heard many times that Kudzu is a big problem in my state. I have also read that you can dry kudzu and turn it into flour and you can eat or ferment the roots. Does anyone here have any experience harvesting invasive kudzu? And if you do, where did you find it? The coast is one of the only parts of Mississippi which is somewhat populated so I’m looking for a guide on where to find some before just driving around the state.
