Which is more limiting for agriculture?

In other words, is it easier to farm during a dry season, or during a cold season? Assuming the soil is otherwise equal and everything else is the same

It's water, plant's don't actually need warmth in most cases as much as they need the spectrum of light that allows for photo synthesis.

I'd say water as well. Kale seeds for example can already start sprouting at 2°C

Also without water your animals will die, while cows can handle cold pretty good

Nether, the most important thing is soil quality. If your soil has fuck all nutrience , wont matter if its cold, cold or wet.

There are a lot of things you can grow during the cold winter months that are very good for you, potato's, carrots, beats, basically any root vegetable, and thing like cabbage can grow in the cold too.

I'm also specifying agriculture, not plant growth in general. Deserts are devoid of plant life while taigas are full of forests, this is true
But you can't eat anything in a Taiga. And as long as you have some water, you can still cultivate food in the desert somewhat easily

are they actually growing though? Or are they simply "tolerating" the cold temperatures when they'd produce much more at a warmer temp?

You see trees and bushing growing and surviving during the winter yeah? Same thing with vegetables.
root vegetables are very hearty plants.

but the root growth depends directly on sunlight absorption, which depends on leaf growth, and leaves are exposed to the cold air.
there's also the issue of lower sunlight, but I'm ignoring this as a factor for now
