kayak is faster, I think way way way more fun, you can do a lot more tricks in it, and the vessel has much greater mobility allowing for a wider range of conditions, but your body itself is slightly more restricted.

I also rarely blister but a lot of cheap aluminum paddles have this weird plastic wrap grip stuff where your hands go that inevitably gets frayed/messed up and gives me blisters.
For whatever reason I enjoy paddling with a wooden paddle so, so, so much more.
You basically take whatever gear you would take on a bike trip, drop the biking gear, add a canoe and paddles and put your stuff in a dry bag. Bring shoes that are okay wet and dry quick. Bring fishing gear. I don't like how life vests feel so I don't wear them unless I'm in white water (could be knocked unconscious even with a helmet I suppose).
Oh yeah, and a paddle tether is a nice thing. Watching your paddle drift off and having to jump in is not always that much fun.
