from a sailing perspective they work almost exactly like a boat, you'll have to learn apparent wind sailing if you haven't sailed on a high performance boat before but otherwise it's the same mechanics. i've always felt like it's an retired person sport though as a lot of it is hunting for the perfect ice or very last minute notifications on where you need to drive to for those perfect conditions. also be prepared to go on some of the sketchiest ice of your life, that super thin just frozen 4cm ice is perfect sailing.
around here pretty much everyone is switching over to snow kiting. mostly same kite equipment people use for the kiteboarding just doing it on the frozen lakes. think most people like using skis for it (longer length is better for speed) but plenty use the snowboards as well.
