I grow a lot of lettuce, after harvest I have heaps of plant material and roots, growing out of 1" rockwool cubes.

Can I feed these scraps to goats, or would the rockwool be a massive negative to goats? I know they'll eat anything so Im leaning towards no

This has got to be bait. Fuck it, I'll bite.
Not a good idea. Rockwool is more or less fiberglass. Last thing you want in your goats' gut is glass shards. Even if they have the sense to eat around the rockwool (they probably do), they'll still get a mouth, nose, throat, and gut full of glass shards.
Just compost the plant material.

Rockwool is literally rocks and slag melted down and spun, like cotton candy. It's pretty inert, and definitely not like fibreglass. Still shouldn't let goats, or anyone else, eat it, might cause compaction. I agree they should just compost.
