I like tying those up and they've always looked nice, but when I'm out on the ocean and it's freezing cold, my default is the palomar knot, since it's quick, easy, doesn't require much dexterity, and is quite strong.

This ones really only useful with braid and/or large hooks, trying to double over mono or flourocarbon and pass it through a small hook eye is a pain in the ass

Don't try doubling up like in that picture. Pass the line through like normal, then loop it back and pass the line back through the opposite direction of the eye, hold the end tag end of the line, and pull out the loop to make it as large as you need to. Works for hooks down to a pretty small size until you get down to flies with their tiny hook eyes in which case the standard clinch knot is king. Video below will help with the visualization since I know text descriptions for knots aren't great. This method of tying it is far easier than doubling over the line.

Super simple, low profile, and mogs every meme line on strength tests.

I used to do fancy looking knots with lots of twists when I was young, then I became an adult and Rabbi Schlomo taught me about the palomar knot on the day of my bar mitzvah

I feel like people make up new knots despite the fact that the ones everyone use don't actually ever fail and if they do it's just line abrasion or strength that was the issue.
