Forage nettles

How do I forage stinging nettles (euro) for food and drink. I read abit and I think youre cant use older nettles bc theyre needles have formed and they can store dangerous nitrates depending on the fertizilier or pesticides used nearby. I wasnt able to gather much and hopes anons could help me

not sure this is how plants work but in any case just avoid modern agricultural areas. if you are something like Netherlands I guess that might be difficult, if not just go to somewhere hilly and foresty. as for the technical part just use gloves and clippers or whatever, sickle on a stick or something. Not much nettle where I live but afaik they do get hard and fibrous as the summer progresses.
I'd suggest you consider other edible plants as well, it's almost dandelion season and the whole Asteraceae family is full of edibles in general.

I'd recommended cutting nettles at the base then wilting them over a fire. This boils off the formic acid but the leaf retains It's flavour. Boiling them makes everything leach into the water and the leaves themselves just taste like paper.

I am but it just seems like stinging nettles are everywhere, from the filename Id guess your hungarian so maybe they get less common further south. For other plants its pretty easy but for nettles I need to be more careful

Yes they are pretty common everywhere including Hungary. I'm mediterranean it's a bit too dry and rocky here and seasons are slightly different. I'd recommend you get out soon even if you don't know what to pick just to get some real xp before the spring is over. It takes some training of the eyes to forage. I often find species that are not listed anywhere and have to work backwards to at least identify the family. Foraging is a nice hobby, I'd say it's the most relaxing of all my outdoor activities and you can train for it everywhere. I actually got into it by observing herbivore diet while searching for hare so it pays off in hunting also if that's your thing.

they are the one of the first potherbs available for me in the spring
the get tough when they are older, and when the start flowering they can give you kidney stones
so i just eat the young spring shoots, when they are a couple of inches long
i use them as a substitute in recipes that use cooked spinach
a lot of wild greens can give you nitrate poisoning
i think it usually happens after they have been sprayed with broadleaf herbicide
