There are some great bike paths and bike friendly roads. I'm not too familiar with the east side of the river but going across the GWB to NJ and through the palisades is a great ride. You will often seen very serious cyclists on 9W comming up from NYC all the way up to Nyack and farther.
What I would do is loop from Soho across the GWB to NJ, up either 9W or palisades park all way up back into NY to Nyack and mountain and back.
Hook mountain is really pretty and it's a fine crushed media groomed trail on the banks of the Hudson.
