As a half Mexican New Yorker raised in Mexico and a Mexican boy scout for 10 years I will say that the southern half is where the cool shit is. In Merida, Yucatan there are some beautiful ruins you can camp at and many places to hike. Locals are friendly and shit is cheap since tourists don't go by there often. There are also pyramids and shit.

Furthermore, there's no best spot. Mexico has every climate on earth besides tundra, if you want to do jungle camping and have permanent swampass there's Chiapas, you want desert there's Chihuahua, for forest you have a good chunk but I liked the Estado De México (not to be confused with the city, it's just outside it) forests as they are sprawling and relatively flat.
