we catch them. they arent bad to eat. most people stew them down but butterfly and dry rub for 2 days then marinate 2 day and bbq- smoke makes them taste like baby pig chicken. they are lean and the fat go rancid fast so need to cut fat away to use. better to add you own fat like bacon or lard. meat with no cure taste like dirty fish pork but you get good meat

Do beavers ever get squashed when they fell trees? I've never seen one make a face cut or a back cut before, and any kind of ppe seems pretty minimal. suprised osha doesn't lay the hammer down more often with some of these guys

Yeah, they are. It's the fattiest bit of game meat available, except when the bears are in the late season bulk. Beaver tail is trapper bacon.
