the Hut system here is pretty good. most are free, the more popular ones are $10 or $20 and you have to book ahead, or you can pay $50 for an annual pass instead.
'freedom camping' in a van is free almost everywhere, just check local by-laws if going to busy/popular places like Queenstown or Wanaka.
the most popular /out/ here is hiking, camping and hunting. fishing is kind of shit here so i dont recommend that. some people go gold panning as well
a lot of LotR film locations are also campgrounds you can camp at

at best there might be a trust box if you go to a proper campground.
main thing here is you need a car to get to most of the best spots, but the country is small enough that Jan/Feb the place turns into a retirement home for people hiking the whole length of the country.
