Assuming Western Washington:
- Lake Cushman and Olympic National Forest is my go to weekend area. If you're casual, there are endless great free camp sites all around High Steel Bridge.
- I've heard Capital State Forest has a lot of great camping, but haven't given it a try.
- If you wanna do something more intense, there are a lot of long hikes in the cascade area. I'm not the biggest hiker, but Humpback Mountain and the surrounding trails are perfect for me.
- Check out the Hood Canal area for endless lakes for fishing. There is also some great 4x4/Dirtbike trails all over Tahuya, great times if you're into that.
- Check out Snoqualmie River for river fishing, amazing spots between Fall City and Snoqualmie.
- I know you didn't mention it, but there are some great Kayak spots in Gig Harbor, Friday Harbor, Eastsound, Vashon Island (Basically any harbor is great for it)
