Carbon steel has a place in the axe world, but it is absolutely misplaced in knives that will be used to dig around animal carcasses, gut fish, prep food, be exposed to (salt) water, rain, stuck back into a wet sheath, cutting up field mice and feeding them to the chickens (yes, that's also what knives are used for). Carbon knives are an obsolescent remnant from a bygone age.

12C27 and 14C28N are absolute no-brainers, very fairly priced these days and, if treated and ground right, far superior to any carbon blade commercially available. Anyone dropping upwards of $100 on 10XX series carbon steel knives like ESEEs is either braindead or a LARPing faggot with no common sense.
