People do a year in the galley for the opportunity to get to fuels or fleet ops, which itself is a springboard to the field or traverse.
People whine and moan but realistically these jobs are a step up from the entry level and you're unlikely to get them first year on the ice.
The entry-level first year stuff would be supply, galley, waste, janitor and shuttle driver. If you are lucky and experienced you can start at the airfield (which is called cargo, though they have some weird name for their job position which I do not know...there's a lot of this sort of confusing bullshit) or fuels, but you will probably need some sort of outside experience to skip that step.
Working for KBA fixing the planes required Canadian citizenship. Working for ACHI fixing the helos is a mysterious process, and helo ops are binned for this coming season. They might be switching contractors.
There are ATC at McMurdo. I think that is through GHG, but I forget.
