why are there so many sources online that say this isn't that great and better mixed with other mushrooms?
it literally has a really meaty taste, almost like bacon when pan-fried well, one of the best edible mushrooms in the world for sure

it's not even clear what the point is, as that excerpt suggests whatever "boleti" is in that context is superior to "suillos", which presumably means porcini (which is also a bolete), or less likely sheep polypore

first of all, the genus Suillus wasn't named that until far more recently, and is not at all what is referred to here
secondly, "boletus" can mean any bolete, which have traditionally been regarded as good food, including the topical birch bolete
thirdly, you clearly don't understand Latin, because it actually says "suillos", which is the plural adjectival form, what Martial is saying here is that the person gets mushrooms that are suitable for pigs rather than humans, while the host dines on boletes (which are considered finer mushrooms), tying into the theme of contrasting the host's delicious foods against the bad ones the speaker is served
and you don't need to tell me who it is, I know orders of magnitude more about this than you ever will, which is why I ordered you to stop quoting something you have zero understanding of without even at least trying to explain it and revealing that you are clueless

Even within a well-defined species, there can be high variability in taste.
It's like how in some places you can eat Gyromitra esculenta with barely any processing, and in some places it will nearly kill you even after boiling it.
