When you get home you will break down the quarters further by cutting along the lines in the muscle to separate the different components.

Muscle=meat. Some of the organs, like heart and liver, are good to eat too. Do not eat the brains. Do not cut into the spine except to take the head as a trophy, and do not use the same knife for that as the one you process meat with. Make sure to read about CWD guidelines in your area if CWD is present in your state.

You carry the meat home in game bags. Old pillow cases work if you're poor but it's better to get real game bags. These help the meat cool a little and keeps bugs and dirt off.
There's also a "gutless method" where you just quarter without gutting, but I would only do that if you can move very fast because the animal will spoil much faster. You also miss out on organ meat.
