Drying fish

Anyone know traditional fish drying methods? What outdoor temps do you need? How to prepare the fish? Prevent spoilage when drying? I have a river near me that whitefish spawn in every spring and want to have free fish for the year off it without needing to can it.

Lots of salt anon. Clean the fish and splay them out flat on a bed of salt and cover with more salt, repeat until you have a tower of em and wait a week or so.

This is how it is done from where I am from, by the sea.
>gut the fish
>clean throughoutly so there's very little blood, etc. left
>take a bucket of very salty water
>leave fish overnight
>take the fish out
>string a line through their eye sockets
>leave in a place with lots of wind, ideally near the sea, and make sure there is no rain coming or there's shelter in place
>leave for few days
You'll get something like this. Smaller the fish the faster the drying process. It will be very salty but it goes very well with beer. It will last for a long time as long as you keep the damp away. The smell will be bad but it is a great snack.

It's an acquired taste. Most preserved fish unless it is smoked is not very nice to modern palates.

Salted fish should be desalinated in water for up to 3 hours before cooking anon. Brined kippers goes fantastic with beer, not the same I know but hand in hand

is it true that drying fish is best during winter freeze, some arctic natives do it like that
i always thought the moisture would just freezse and would never evaporate away but on the other hand thats how freezers work too
