I have thought about this and made it a plan for the later years of my life. For one to avoid taxes you should go abroad. Second you have to consider energy and water. How will you get these things? You need to cook, bathe, drink, store food. If you are going to do underground celler fridge and fire cooking you still need water, relying on rain won't be enough unless you can collect a lot or buy water and purify it and have a giant cylinder with it on rotation. If you use solar energy you need sun. If you use water energy you need flowing water. If you want to grow everything consider how long it takes to grow certain foods and their conditions. If you want to raise animals you have to take care of them, shovel the droppings, feed them, house them. One chicken lays enough eggs for one person, but consider having more to always have a chicken. Chickens make noise too, that rooster will cah caw every morning at 6 or 7 am.
Also few people consider this but what about protection? You being alone in the woods are vulnerable. I would personally build some fence around your area and some further protection from animals and weird people.
Anyway if you do this it will take a few years to get set up. Look at people who post their journey on youtube and how long it takes them with help.
