First in first out means “use this older pile this year, use that pile you split last year next year and use this fresh pile you’re making now in two winters” not being autistic about the fact that your pile started with some leftover wood instead of all being from the same cutting season.
And yeah, you should have a roof with an air gap.
That’s why I like stealing pallets, I can just screw a bit of ply to a pallet, hose it with some barn paint, and toss it on top of my pallet stack.
But I guess you could put an old Satellite TV antenna or an old corn crib roof on the beehive pile.
