Whitewater kayaks where appropriate, sea kayaks for large (Great) lakes and the ocean.
Canoes are great for newbies as far as comfort and initial stability. And obviously you can carry more and especially more bulky items.
Note that kayaks are far more stable, especially in heavy weather/waves, but if you or someone you're with has never spent time in one, there's a learning curve for getting comfortable with how they move under you.
I personally love sea kayaks for long trips on the Great Lakes or if you were traveling on the ocean. You're limited on the large objects you can take, but especially the roomier two-person sea kayaks have plenty of room for gear if you're smart about stowing it. Plus the storage compartments are generally waterproof in the event of waves/rolling the boat.
