Is there a stable, open top, multi-person watercraft that is still small enough for one person to portage/put on top of a car? I know a canoe does pretty much all of this besides being really stable, although they aren't that bad. I just want to be able to sit down and not have to worry about flipping

different style canoes, some are pretty stable, but the only long ones you can carry by yourself easily are made of a more fragile material(and expensive). if you're pretty strong the more durable 15-17ft canoes are about 80lbs. they aren't as unstable as you might think either, as long as your passengers don't act crazy. they feel tippy because of mediocre initial stability, but they have decent secondary once they lean. you can always try one for pretty cheap by searching marketplace/craigslist for a grumman aluminum canoe. tons of them were made, and even in pretty good condition people sell them for under $500. they are a steal at that price. pic rel is my beat up one. plenty of good tandem kayaks, but if you want to seat at least 3, canoe is the only option. well, there is this...

Used to do kayaking a lot, sea kayaking.

Now I'm mostly a canoe guy, I mean fuck I own two, just for the increased carrying capability, yea its slower, and rolls are fun. but I can carry atleast 4 times as much

theyre still faster than your typical recreational or fishing kayak, as long as you use a double bladed paddle. only touring kayaks are faster than a long canoe. acceleration is slower in a big canoe, but once you get up to speed and stop/slow down paddling, they glide for a long time, that's what I like.

I live in Appalachia, so that doesn't happen too often. Just about whatever time of year it is, there are wonderful trees to look at.

Here kayak pretty much only refers to watercraft like this, slim, narrow, some kind of skirt, not the American ones
A kayak will absolutely outpace a canoe any day, but, again, carrying space, I would rather spend two extra hours on the water, but have a nice tent
