dig ~waist depth then support it with more wooden framing than you think you need and repeat (the next day probably lol). when you get to your desired depth dig out a quarter (imagine a graphing quadrant, one of those quarters with a corner in the middle of your hole) at a time supporting as you go. take your time and enjoy it if this is what you want to do is what i say.
if you want my advice on what to do i would recommend digging just off from a large tree and seeing if you can use the roots to help support your tunnel (because it would look cool and last longer/be stronger than a wood plank)
