We just cut the leg off some guy who got his leg stuck between rocks and was trapped half under water for days.

Do not wear a plastic bag on your foot. The second it fills with water it weighs as much a a gallon of water. You can drown if you have two gallon bags of water tied to your feet and you fall over.
This is a very serious risk for people with waders, the lower your waders you might think the less risk, but equally you're more likely to get them flooded.
And this goes double for bogs, because your waders can create a vacuum trapping you in only 4 inches of liquid.
This all seems ridiculous and a stupid problem, and you can happily run around like a fool in a plastic bag and it may never happen, but recognise the specific context of that risk.
